Ok, it’s after 5pm, the kids are hungry and the man is coming home soon. What the heck is for dinner??? You want to make that favorite recipe but it calls for something NOT in your pantry.
I stumbled across this recipe on Pinterest and am always looking for a healthier version of anything. So what do you do when a recipe calls for a cream o’ something soup and you don’t have any? A mad dash to the store? I think not.
Now you can have a dry mix that can be substituted for: cream of chicken soup or cream of mushroom soup or even the seldom used cream of celery soup….(seriously, how often have you used that soup?)
Anywho, Vicky over at One Orange Giraffe has come up with a dry mix that can be used in the place of any cream soup! How about that? Here is her recipe (and don’t forget to check her out at www.1orangegiraffe.blogspot.com)
Condensed Cream of “Something” Soup.
A great dry mix that only needs water!!
Since I had everything needed to make up a batch I went a step further and made up a gallon containers worth.
Cream of “something” soup recipe
1 cup non-fat dried milk
3/4 cup cornstarch
1/4 cup bouillon (if you have cubes you have to smash them up) You can use whatever kind you like (ie, beef, chicken, veggie)
4 Tablespoons freeze dried minced onions (I used the minced onions from Sam’s Club)
1 teaspoon dried basil
1 teaspoon dried thyme (I couldn’t find the thyme so I used dried parsley instead)
1 teaspoon pepper
(For the equivalent of one can of condensed cream soup, mix 1/3 cup dry mix with 1 1/4 cup water. Cook until thick)
Keep this stored in an airtight container in pantry with recipe card taped to front! No mess-ups!
And if that doesn’t motivate you…check out the ingredients on a typical can of cream of chicken soup:
Chicken Stock, Water, Vegetable Oil, Modified Food Starch, Wheat Flour, Cream (Milk), Contains Less Than 2% Of: Salt, Dehydrated Cooked Chicken, Soy Protein Concentrate, Monosodium Glutamate, Chicken Fat, Yeast Extract, Flavoring, Beta Carotene for Color, Chicken Flavor, Partially Hydrogenated Soybean and Cottonseed Oil, Butter (Milk).
Yeah, that’s what I thought.
Now get out those pyrex dishes and whoop up a casserole tonight!
